IRAN a country with an ancient history and a vast land has a diverse climate and in all times, it holds four seasons. As a result of its fertile land, various types of agricultural and garden products are produced in a year in organic and fully natural forms. One of the agronomical products of Iran which enjoys a world reputation is Saffron. The history of Saffron plantation in Iran dates back to more than 3000 years ago. As this colored and costly plant is produced in the desert soil, it has become known as “red gold or desert gold”. This precious product has been noticed and demanded by many countries since centuries ago. Saffron was one of the valuable commodities which used to be traded in the historical route of “Silk Road” by businessmen and rulers of the countries.


Because of many properties, Saffron has many applications in various industries including food industries, pharmaceutical industries, cosmetics industries, and textile industries. The high power of Saffron in natural coloring due to the existence of “Crocin” has made it be replaced with artificial color materials in the high quality food production industries.

Because of beautiful color , fragrance and very favorable taste , it is used in many foods such as meat , chicken, fish, rice , dish, soup, sweet , biscuits, ice cream , syrup and in particular tea and many other food materials. Consuming a cup of Saffron tea or Saffron syrup will remove exhaustion. Saffron creates joy and has been recognized effective in removing depression and distress.


Since past centuries, great scientists such as Avicenna, Zakariyā Rāzī, Aboureihan Biruni and many others up to the present have emphasized on the food and medial properties of Saffron in the scientific and research prestigious centers of the world. Using Saffron as a food condiment or herbal tea will lead to a better absorption of its effective compounds in the body and consequently receiving useful elements such as calorie, carbohydrates, protein, fiber, iron, phosphor, calcium, sodium and potassium.
